Blueberry Coconut Dessert

We have a little treat for you today! This recipe is from our guest post writer D.J. Little. It is super easy to make and a nice dessert for these hot summer days!

This recipe fits into the Paleo, Whole 30, Ketogenic, and Vegan diets, so no matter how you eat, it’s hard to go wrong with this one!

Blueberries are really good for our brains! They are high in antioxidants and other nutrients, and are also low glycemic.

Coconut is full of good fats and is also low in carbs!

Add some stevia as a natural sweetener, and you’ve got a delicious healthy treat!

If you don’t have any coconut cream on hand, you can find it here!

And this stevia is organic and will last you a long time, too!

Blueberry Coconut Dessert


3 cups frozen blueberries
1/2 cup unsweetened coconut shreds
1/2 cup coconut cream
Stevia to taste

Directions:
Mix all ingredients together and allow to thaw.
Add in 1/2 cup slivered almonds just before serving (they will get soggy if you put them in early). Stir well and enjoy!
