Chocolate Coconut Balls

Ingredients:

1/2 cup salted butter, softened
1/2 cup xylitol/monkfruit/erithritol
1/4-1/2 cup cacao powder
1 tbsp. pure vanilla
1/2 cup quick oats
1/2 cup unsweetened flaked coconut
Additional coconut

Mix together all ingredients well, using less cacao powder for a more buttery flavor, or more for a more chocolatey flavor. Form into 1-inch balls; roll in coconut. Chill until firm.
