Hearty Mexican Dinner

1 lb. ground beef
1/2 cup plus 1 tbsp. olive oil, divided
1/2 cup diced onion
2 garlic cloves, crushed
1/2 cup diced tomato
1 cup finely chopped fresh cilantro (stems and leaves)
2 cups prepared black beans
1 cup prepared lentils
Juice of 2 limes
2 tsp. taco seasoning
1 tsp. cumin
2 tsp. sea salt
1/2 tsp. pepper:
Rice, tortillas, tortilla chips, or chopped lettuce
Shredded cheese, diced tomatoes, sour cream, avocado, cilantro sprigs, and salsa OR toppings of your choice


Cook ground beef over medium heat in 1 tbsp. olive oil, the onion, and the garlic, stirring often, until beef is no longer pink. Remove from heat; stir in remaining ingredients. Heat through. Serve over rice, tortillas, chips, or lettuce with desired toppings.
